Grilled Shrimp and Garlic Pesto Pizza

INGREDIENTS
- 1 jar Garlic Survival Pesto
- 3 large, ripe tomatoes
- All purpose flour
- Yellow cornmeal
- 1 1/2 teaspoons salt
- 2 teaspoons olive oil, plus 1 teaspoon for greasing the bowl
8 ounces buffalo mozzarella, thinly sliced
- 16 large shrimp, peeled and deveined
- 1 lb. Bakery pizza dough
DIRECTIONS
Grilled Shrimp:
1) Brush each shrimp with Garlic Survival Pesto.
2) Grill 1-2 minutes on each side until cookedPizza:
- 1) Lightly sprinkle flour and cornmeal on a large baking sheet. Place dough on surface, and roll to a 1/4-inch thickness. 2) 2) Gently transfer pizza dough to the baking sheet.
- 3) Slide pizza dough from the baking sheet onto cooking grate; spread 1/3 cup Garlic Survival Pesto evenly over crust, and top with shrimp mixture.
- 4) Cover with slices of buffalo mozzarella
- 5) Grill, covered with grill lid, at 350° (medium heat) 4 minutes. Rotate pizza one-quarter turn, and grill, covered with grill lid, 5 to 6 more minutes or until pizza crust is cooked. Serve immediately.
